An evil sheep will retreat at 20 (5.71%, red) health.
Strategy
They aren't very harmful, but be careful not to get more than 2-3 at the same time. They are very slow but mostly found on top of mountains on Isle of Evil so it isn't easy to run them there. If you find an Evil Sheep Lord make sure you kill him first because he summons Evil Sheep.
